Has anyone found a brake pad for the V that cuts down on the dust and is still reasonably good stopping power? And if so, where to purchase?

I had my new rotors, painted calipers and new brakes put on at the same time. They replaced my brake fluid when they did it. It wasn't an expensive addition, so I never thought much about it.What are the thoughts of the group concerning replacing brake fluid when replacing pads? I have 67 k on the escalade and it needs pads. dealer says to replace the brake fluid. Never have done that on any car I have owned. Is this some thing new. does it really have to be done?
